Ingredients

  • 500 g liver
  • 2 slices of white bread
  • 200 mL milk
  • 70 g onion
  • 20 g butter
  • 2 eggs
  • 2 sprigs of parsley
  • 5 g flour
  • 2-3 drops of nutmeg
  • Pepper

Directions

  1. Preheat your oven to 180°C.
  2. Cut the liver into small pieces, of a size that won’t pose a choking hazard for your children.
  3. In a pot, melt the butter and add the chopped onions. Saute until the onions are translucent.
  4. Add the liver to the pot and let it cook for 10 minutes.
  5. Meanwhile, prepare the bread-milk mix. Soak the white bread slices in the milk, for 5 minutes and then finely mash it with a fork.
  6. Take the liver off heat and let it cool down.
  7. In a bowl, add the cooled-down liver, mashed bread-milk mix, parsley, nutmeg, pepper, eggs, flour and mix well with a spoon.
  8. Let the mixture rest for 3-4 minutes.
  9. Take small spoons of the mixture and form the leberknödel.
  10. Grease a baking sheet with some butter and place the formed leberknödel on it.
  11. Bake them in the preheated oven for 20-25 minutes.

Recommended Sides

Leberknödel go great with a creamy soup or a side of potatoes or pickles.
