Ingredients
- 3 tablespoons cooking oil (e.g., vegetable or extra-virgin olive oil)
- 1 onion, finely diced
- 1 large carrot, grated
- ½ teaspoon dried oregano
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 500g lean beef mince
- 500ml tinned tomatoes
- 3 tablespoons tomato paste
- 1 teaspoon sugar
- 250g fresh lasagne sheets
- 150g ricotta cheese
- 2 tablespoons parsley, finely chopped
- 200g grated mozzarella cheese

Preheat the oven to 200 degrees Celsius.

In a large frying pan on medium-high heat, heat the oil, then add the onion, carrot, oregano, garlic and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

Add the beef mince and use a wooden spoon to break it up as it cooks for about 10 minutes until browned.

Pour in the tinned tomatoes, tomato paste and sugar, and stir to combine. Reduce the heat to low and simmer for about 15 minutes until the sauce has thickened.

Grease an oven-proof dish with cooking oil, then start assembling your lasagne. Spread a thin layer of the mince mixture on the bottom, followed by a layer of lasagne sheets and a layer of ricotta.
