Ingredients
- 1.2kg (2.5 lb) Pork Loin Roast
- 2 Onions, medium-sized
- 1 Apple, medium-sized
- 1 Carrot, medium-sized
- 1.5 Cups Water
- 10ml (2 Teaspoons) Dried Marjoram
- 5ml (1 Teaspoon) Ground Black Pepper
- 5ml (1 Teaspoon) Dried Thyme
- 5ml (1 Teaspoon) Ground Allspice
- 5ml (1 Teaspoon) Ground Coriander
- 2 Bay Leaves
- 40ml (2 Tablespoons) Olive Oil, extra-virgin
Directions
- Preheat your oven to 210°C/410°F
- Peel and finely dice the onions, apple, and carrot
- In a large, shallow roasting pan lay the pork loin roast on the bottom
- Sprinkle the spices over the roast evenly.
- Scatter the diced onions, apple, and carrot over the roast.
- Add the olive oil, and pour the water over the roast.
- Place the bay leaves on top of the roast.
- Cover the roasting pan with lid or tin foil.
- Put the roasting pan in the preheated oven and bake for 1 hour and 45 minutes, taking off the lid or tin foil after 1 hour.
- Let rest for five minutes, before serving.
