Knödelauflauf

Ingredients
- 5 medium-sized potatoes, peeled and cubed (about 650-700g)
- 1 medium size onion, diced
- 200g / 2 cups of macaroni
- 1/2 teaspoon of nutmeg
- 2 tablespoons of butter or vegan butter
- 1/2 litre of vegetable broth
- 2 tablespoons of olive oil
- 150-200ml of oat milk (can be substituted for other milk alternative)
- 5 slices of bacon, cut into small strips
- 2 sprigs of fresh thyme
- 2 sprigs of fresh parsley
- 1 bay leaf
- Salt and pepper to taste
Directions
- Preheat the oven to 200°C / 390°F and lightly grease a medium-sized baking dish with butter or vegan butter.
- Peel and cube the potatoes. Place in a large pot and pour 1 liter of water over them. Add 1 teaspoon of salt and bring to a boil. Simmer for 15 minutes, or until the potatoes are fork-tender.
- Heat the olive oil in a large saucepan and add the diced onion. Sauté for 2-3 minutes until the onion becomes transparent.
- Add the macaroni and the nutmeg, reduce the heat and cook for a further 5 minutes.
- Pour in the vegetable stock and oat milk. Bring to a boil and reduce to a simmer for 15-20 minutes, stirring regularly, or until the macaroni is almost cooked.
- Add the potatoes to the saucepan and stir to combine.
- Remove the bay leaf, add the strips of bacon, and season with salt and pepper to taste.
- Transfer the mixture to the baking dish, top with knobs of butter or vegan butter and sprinkle with a generous amount of thyme and parsley leaves.
- Bake in the center of the preheated oven for 35-40 minutes.
- Serve with a side of crunchy green salad - and don’t forget a nearby fire extinguisher!
