Ingredients
- 1-2 napa cabbage heads, about 1kg (2.2lbs) each
- 2-3 teaspoons of sea salt
- 2-3 red chili peppers, finely chopped
- 3 cloves of garlic, finely minced
- 2-3 tablespoons of fresh ginger, grated
- 2 tablespoons of fish sauce
Directions
- Cut each of the cabbage heads lengthwise into four pieces. Discard the core and then slice the cabbage into thin strips.
- Place the cabbage in a bowl and sprinkle with the salt.
- In a separate bowl, mix together the chili peppers, garlic, ginger, and fish sauce.
- Massage the salt into the cabbage until it starts to become soft, then add the chili pepper mixture to the cabbage.
- Using your hands, mix the ingredients together until they are evenly distributed throughout the cabbage.
- Place the cabbage in a pickling jar and press it down so that it’s submerged in its own juices.
- Let it sit at room temperature for 24-48 hours, or until the cabbage has softened.
- Enjoy your freshly made kimchi! Don’t be surprised if it “kimchi-s away” before you know it!
