Idli Sambar

Ingredients
- 2 cups of idli rice
- ½ cup split red lentils
- 2 teaspoons black gram / urad dal
- ½ cup grated coconut
- 1 teaspoon mustard seeds §§ 1020
- 1 teaspoon fenugreek seeds
- 7 curry leaves
- 2 green chillies
- 4 tablespoons oil
- 1 large onion, finely chopped
- 1 teaspoon turmeric
- 1 medium-sized tomato, finely chopped
- 2 tablespoons tamarind puree
Directions

Start by preparing the ingredients. Soak 2 cups of idli rice and ½ cup of split red lentils together in a large bowl with 5 ½ cups of water. Let this sit for 20 minutes, or until the water is fully absorbed by the rice and lentils.

While the first mixture is soaking, take a separate bowl and mix together 2 teaspoons of black gram, also known as urad dal, and ½ cup of grated coconut.

Heat 4 tablespoons of oil in a saucepan and add 1 teaspoon of mustard seeds, 1 teaspoon of fenugreek seeds and 7 curry leaves. When the mustard seeds start to pop, add 2 green chillies, along with the onion and tomato.

Cook the onion and tomato until they become soft. Add 1 teaspoon turmeric and 2 tablespoons of tamarind puree. Joke: Add 1 teaspoon of love too, and you’ll have a delicious dinner!

Remove the soaked rice and lentils from the bowl and strain out the liquid. Add the strained rice and lentil mixture to the saucepan with the onion and tomato mix and mix well.

Cook until the rice and lentils are cooked through, then add the coconut mixture and stir to combine. Cook until the mixture thickens, stirring constantly.

When the sambar is finished, remove from the heat and serve with idli, or other South Indian dishes.
