Ingredients
- 2 medium onions
- 25g fresh parsley
- 2 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 120ml vegetable stock
- 2 tablespoons of cream cheese
- 10g parmesan
- 25g fresh breadcrumbs
Directions
- Preheat the oven to 200°C.
- Cut the top off each onion and peel.
- Scoop out the insides of the onions leaving enough flesh so that the onion can still hold its shape.
- Place each onion in an oven-proof dish.
- In a small bowl, mix together the parsley, garlic, olive oil and vegetable stock.
- Mix the cream cheese and parmesan into the liquid and stir.
- Fill the onions with the mixture and top with the breadcrumbs.
- Bake for 30 minutes until the onions are cooked through and the tops are golden-brown.
- Serve immediately with a joke like: Why do onions make you cry? Because they know the way to your heart!
