Ingredients
- 2 leeks
- 2 tablespoons of vegetable oil
- 2 ripe Anjou pears
- 1 package of ready-made Flan pastry
- 2 tablespoons of almond powder
- 3 eggs
- 30 cl of whole milk

Preheat the oven to 180 degrees celsius.

Start by preparing the leeks: Rinse them under cold running water, and then cut off the roots and the dark green part from the top. Slice the leeks in thin layers and then rinse them once again.

Heat the vegetable oil in a large pan over medium heat. Once the oil is hot add the sliced leeks and cook until softened, approximately 10 minutes, stirring occasionally.

Peel the pears, cut them in half and remove the core. Cut the pears into small cubes and add them to the leeks. Cook for 5 more minutes.

Prepare the flan pastry: Roll out the pastry on a lightly floured surface and then carefully transfer it to a 26 cm tart pan. Cut off the excess pastry, pressing it gently along the sides of the pan.

In a large bowl, beat the eggs and almond powder until combined and then add the milk. Pour the milk and egg mixture over the leeks and pears.

Bake the flan in the preheated oven for 45 minutes or until golden brown.

Let the flan cool for 10 minutes before serving.
