- 230g uncooked Japanese noodles such as Hakata Tonkotsu Ramen
- 1 tsp olive oil
- 4 large tiger shrimp, peeled and deveined
- 100g mayonnaise
- 1/2 tsp black pepper
- 60g shredded cucumber
- 2 tbsp sesame seeds
- 1 green onion, finely chopped
Directions
- In a large pot of boiling water, add the noodles and cook them according to the instructions on the packaging.
- Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for about 3 minutes, until they are cooked through and pink.
- In a small bowl, combine the mayonnaise, black pepper, sesame seeds, and 1 tbsp of the chopped green onion.
- Drain the cooked noodles and add them to the skillet with the cooked shrimp.
- Add the mayonnaise mixture and stir to combine.
- Serve the noodles topped with the shredded cucumber and the rest of the chopped green onion.
