Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp paprika
- 1/2 tsp garam masala
- 1 tbsp oil
- Fresh coriander leaves, for garnish
Directions
- Heat oil in a pan over medium heat. Add chopped onions and cook until they are soft and translucent.
- Add minced garlic and grated ginger to the pan. Stir well and cook for another 2 minutes.
- Add chopped tomatoes to the pan and cook until they are soft and mushy.
- Now add cumin powder, coriander powder, turmeric powder, paprika, and garam masala to the pan. Stir well to combine all the spices with the vegetables.
- Add the drained and rinsed chickpeas to the pan. Mix everything together and let it simmer for 10-15 minutes, stirring occasionally.
- Once the curry has thickened and the flavors have melded together, remove from heat.
- Garnish with fresh coriander leaves before serving.
