Carrot and Cashew Soup

Ingredients
- 1 tablespoon of sunflower oil
- 2 cloves of garlicpeeled and sliced
- 2 cups of finely chopped carrots
- 2 cups of vegetable stock
- 2 tablespoons of toasted cashew nuts
- 1/2 teaspoon of ground black pepper
Directions
- Heat a medium-sized saucepan over a medium heat.
- Add the sunflower oil and garlic to the pan and cook for 1 minute, stirring regularly.
- Add the chopped carrots to the pan and cook for 3 minutesstirring regularly.
- Pour the vegetable stock into the pan and bring to the boil. Cook for 10 minutes, stirring every few minutes.
- Reduce the heat to low and use a hand blender to blend the soup until it is creamy.
- Add the toasted cashew nuts and ground black pepper and stir until well combined.
- Serve and enjoy your Carrot and Cashew Soup!
