Ingredients
- 2 cans (280 g each) of canned artichoke hearts, drained and finely chopped
- 1/2 cup (115 g) of plain Greek yogurt
- 1/4 cup (60 ml) of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon (5 ml) of Dijon mustard
- 2 tablespoons (16 g) of freshly grated Parmesan cheese
- 2 tablespoons (4 g) of freshly chopped parsley
- Freshly ground pepper, to taste
Directions

Preheat oven to 375°F (190°C).

In a small bowl, combine the chopped artichoke hearts, Greek yogurt, olive oil, garlic, and Dijon. Mix until all ingredients are evenly combined.

Add the Parmesan cheese, parsley, and freshly ground pepper. Mix until all ingredients are evenly combined.

Transfer the artichoke dip into an oven-safe dish. Sprinkle the remaining Parmesan cheese over the top and place in the preheated oven.

Bake for 25 minutes, or until the cheese is melted and the dip is hot.

Remove the dip from the oven and enjoy it with your favorite dippers, such as crackers, sliced vegetables, or chips.
