Ingredients
- 2 medium zucchinis, sliced thinly
- 2 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh rosemary leaves, chopped
- 1/4 teaspoon freshly ground black pepper
- Pinch of sea salt
Directions
- Preheat the oven to 200 degrees Celsius.
- In a medium bowl, combine the zucchini slices, garlic, olive oil, rosemary leaves, black pepper and sea salt. Mix well until everything is evenly coated.
- Line a baking sheet with parchment paper. Spread the zucchini slices out onto the baking sheet.
- Bake in preheated oven for 30 minutes, stirring every 10 minutes or so to ensure even cooking.
- Once cooked through and golden-brown, remove from oven and serve.
Recommended Sides
Serve alongside a green salad for a complete meal, or as a side dish with your favorite protein. For extra flavor and color, add a sprinkle of freshly chopped parsley.
