Ingredients
- 1 cup dry bulgur wheat
- 1/2 cup chickpeas, cooked and drained
- 1/3 cup fresh parsley, finely chopped
- 1/3 cup fresh mint leaves, finely chopped
- 1/4 cup olive oil
- 1/3 cup freshly squeezed lemon juice
- 1/4 cup green onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 cucumber, diced
- 1/2 red pepper, diced
- Salt to taste
Directions

Put the bulgur wheat in a large heat proof bowl. Then, pour boiling water over the bulgur wheat, making sure it is completely covered. Allow the bulgur wheat to sit for 10 minutes.

Get the 3 and 7 year-old children to help you assemble the salad. Have them help you dice the cucumber and red pepper into small pieces.

In another bowl, combine the cooked and drained chickpeas, freshly chopped parsley, and freshly chopped mint.

In a small bowl, whisk together the olive oil, lemon juice, green onions, garlic, and cumin.

After the bulgur has softened, drain any excess water. Add the bulgur to the bowl with the chickpeas and herbs.
