Spezzatino di Agnello

Ingredients
- 1 kg lamb shoulder, diced into small cubes
- 1 medium onion, chopped into small pieces
- 2 carrots, sliced thinly
- 2 sticks of celery, chopped into small pieces
- 2 cloves of garlic, minced
- 2 tbsp of extra virgin olive oil
- 500 ml of tomato passata
- 500 ml of chicken or vegetable stock
- 1 tbsp of dried thyme
- 1 bay leaf
- A pinch of ground black pepper
Directions
- Heat the olive oil in a deep pan over a medium heat.
- Add the diced lamb shoulder and cook for 5 minutes, stirring occasionally.
- Add the onion, carrot, celery, garlic and stir until all the vegetables are coated in the oil.
- Cook for a further 3 minutes, stirring regularly.
- Pour in the tomato passata and stir until everything is combined.
- Add the stock, thyme, bay leaf and pepper and stir until everything is combined.
- Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
Hint: Put on your favourite family movie, this is perfect stewing time!
- Check that the lamb is cooked through before serving.

For the best idea experience, serve alongside steamed rice, mashed potatoes, or cooked vegetables.
