Shiitake Mushroom Soup
This nutritious Shiitake Mushroom Soup is a great way to introduce healthy eating to toddlers and kids in Australia. A rich mushroom-based soup without salt or sugar that’s perfect for the whole family.
Ingredients
- 2 tablespoons of olive oil
- 70g of fresh shiitake mushrooms
- 70g of spring onions, finely chopped
- 2 cloves of garlic, minced
- 150ml of vegetable or chicken stock
- 250ml of water
- 1 teaspoon of black pepper
- 1 teaspoon of dried oregano
Instructions
- Heat the olive oil in a saucepan over medium-high heat.
- Once the oil is hot, add the shiitake mushrooms and sauté for 5 minutes_smiling all the way. As they cook they will look like they’re “mushroom-ing” around in the pan!_
- Add the spring onions and garlic and sauté for another minute.
- Pour the stock and water into the pan, making sure to stir it around so that the liquid coats the mushrooms and onions.
- Add the black pepper and oregano and stir to combine.
- Let the soup simmer for 15 minutes.
- Once the soup has simmered, take it off the heat and let it cool a little bit.
- Serve the Shiitake Mushroom Soup in four separate bowls, making sure to share a smile with the other members of your soup-erb family!
