Ingredients
- 3 tablespoons vegetable oil
- 2 cloves of garlicpeeled and minced
- 1cm of fresh gingerpeeled and grated
- 200g of mushroomssliced thinly
- 1.5L of vegetable broth
- 200g of dried soba noodles
- 500g of skinless salmon filletcut into bite-sized pieces
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of sesame oil
- 2 tablespoons of sesame seeds
- Freshly ground pepper to taste
Instructions
- In a large pot over medium-high heatheat the oil until it shimmers. (Joke: And now your pot is ready to make a shimmering soup!)
- Add the garlic and ginger and cook until fragrantstirring oftenabout 1 minute.
- Add the mushrooms to the pot and cook until golden brownabout 4 to 5 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the soba noodles and simmer for 10 minutes.
- Add the salmon pieces and soy sauceand simmer for an additional 8 minutes until the salmon is cooked through.
- Add the rice vinegarsesame oiland sesame seedsand stir.
- Remove the pan from the heattasteand season with freshly ground pepper as desired.
