Ingredients
- 120ml olive oil
- 2 cloves of garlic, peeled
- 2 slices of white bread, sliced into cubes
- 1 teaspoon of paprika
- 1 teaspoon of ground cumin
- 1 pinch of cayenne pepper
- Optional: 2 teaspoons of parsley, chopped
Directions
- Heat a pan with the olive oil over medium-high heat.
- Peel the garlic cloves and add them to the pan. Cook until they start to turn golden brown (less than a minute).
- Add the cubes of bread and cook until they’re toasted (about 3 minutes).
- Add the paprika, ground cumin and cayenne pepper to the pan and mix everything together.
- Optional Add the chopped parsley and mix everything again.
- Turn off the heat and transfer the rouille to a bowl.
- Serve as a dip for grilled vegetables, or on top of pasta or fish.
