Ingredients
- 1 Tbsp. Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 1 first onion, finely diced
- 200g Arborio Rice
- 1 cup white wine
- 500ml vegetable intense stock
- 100g Parmesan cheese, grated
- 2 Tbsp. butter
- 2 Tbsp. chopped flat-leaf parsley
- Black pepper (to taste)
Directions
- In a large saucepan, heat the extra virgin olive oil over medium heat.
- Add the garlic and cook for 1 minute until fragrant, making sure to not let it burn. Then add the finely diced onion and cook until translucent, around 5 minutes.
- Then add the Arborio rice and cook for a few minutes stirring continuously.
- When the rice is hot, add the white wine, stirring until it’s all been absorbed by the rice.
- Now, pour in the vegetable intense stock, ½ cup at a time, stirring continously.
- Once all the stock has been absorbed, turn off the heat and add the butter, grated Parmesan cheese, chopped flat-leaf parsley, and pepper to taste. Mix everything together and turn off the heat.
- Serve the Rizotto and enjoy the delicious Italian flavor with the family! “Buon Appetito!”
