Popcorn Shrimp

Ingredients
- 500g (1.1lb) of tiger prawns, peeled and deveined
- 2 Tablespoons of plain flour
- 2 Tablespoons of cornflour
- 2 Tablespoons of finely chopped parsley
- 3/4 cup of olive oil
- 2 Tablespoons of paprika
Directions
- Preheat the oven to 220°C (428°F).
- Peel and devein the tiger prawns, then pat them dry with a paper towel.
- In a bowl, mix together the plain flour, cornflour, parsley and paprika.
- Dredge the tiger prawns in the seasoning mix, then transfer to a baking sheet lined with baking paper.
- Drizzle with the olive oil and bake for about 10 minutes until golden.
- Who needs salt when you have a lime? Squeeze lime juice over the popcorn shrimp and serve.
