Ingredients
- 4 eggs
- 225 g (7 ounces) butter
- 375 g (13 ounces) plain flour
- 2 tsp baking powder
- 2 tsp baking soda
- 500 g (17 ounces) crushed pineapple in juice, well drained and any excess juice removed
- 150 g (5 ounces) light brown sugar
Directions
- Preheat the oven to 170°C (335°F).
- Line a 23 cm (9 inch) spring-form cake tin with baking paper.
- In a bowl of an electric mixer, beat the eggs for about 4 minutes, or until light and fluffy.
- In a separate bowl, mix together the flour, baking powder and baking soda.

Then add the butter to the egg mixture and beat until well combined.
- On low speed, gradually add the flour mixture to the egg mixture, scraping down the sides of the bowl as needed.
- Next, fold in the crushed drained pineapple until evenly distributed.
- Finally, add the light brown sugar and mix until all of the ingredients are combined.
- Pour the mixture into the prepared tin and bake in the preheated oven for 30 minutes or until a skewer inserted into the centre comes out clean.
