Ingredients
- 1 pack of ready-made puff pastry dough
- 16oz of ground foie gras
- 2 tablespoons of diced shallots
- 1 tablespoon of butter
- 2 tablespoons of freshly chopped parsley
- 2 tablespoons of olive oil
- ½ teaspoon freshly ground black pepper
- 2 teaspoons of freshly chopped chives

Preheat the oven to 350°F (176°C).

Unwrap the puff pastry dough and place it onto a lightly-floured work surface. Roll out the dough to form a rectangle that is 12 inches (30 cm) long and 8 inches (20 cm) wide.

Transfer the rectangle of dough onto a baking sheet lined with parchment paper, and prick all over with a fork. This will ensure the dough doesn’t puff up and become soggy when it bakes.

Bake the pastry for 15 minutes, or until it is golden-brown and crisp. Remove and set aside to cool.

Meanwhile, heat the olive oil in a skillet over medium-high heat. Add in the shallots and sauté for a few minutes, until they are soft and translucent.

Add the ground foie gras to the skillet, breaking it up with a spoon as you stir and cook it. Continue to cook, stirring occasionally, for 8-10 minutes, or until the foie gras is golden-brown and cooked through.

Remove the skillet from heat and stir in the butter, parsley, pepper, and chives.

Place the cooled puff pastry onto a cutting board. Cut it into 6 equal pieces lengthwise, and 6 pieces widthwise.
