Ingredients
- 2 kg of beef tongue, trimmed
- 1/2 cup of white vinegar
- 2 liters of cold water
- 6 carrots, peeled and diced
- 4 sticks of celery, diced
- 4 large onions, diced
- 2 cloves of garlic, minced
- 2 bay leaves
- 6 peppercorns
- 2 sprigs of thyme
- 2 tablespoons of olive oil
Directions
- Place the beef tongue in a large pot and cover it with the vinegar and cold water.
- Bring the pot to a boil over medium-high heat, then reduce the heat to low and simmer for 1 ½ hours.
- While the beef tongue is cooking, heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, add the carrots, celery, onions, and garlic and cook until the onions are translucent, about 8 minutes.
- Add the bay leaves, peppercorns, and thyme and continue to cook for 2 minutes.
- When the beef tongue is done cooking, strain the liquid and discard.
- Add the vegetable mixture to the pot and simmer for 1 more hour.
- When the tongue is tender, remove it from the pot and let it cool.
- Once cooled, peel the outer skin off the beef tongue and discard.
- Slice the tongue into thin slices.
- Serve with your favorite sides.
