Ingredients
- 4 Large Eggs
- 1 Bunch of Asparagus
- 2 Tablespoons Olive Oil
- 2 Garlic Cloves, minced
- 1/4 Onion, diced
- 1 Teaspoon Chopped Fresh Parsley
- 1 Teaspoon Unsalted Butter
- Pinch of black pepper
- Pinch of chili flakes (optional)
Directions
- Preheat oven to 375°F and grease a 9-inch baking dish with the butter.
- Trim the asparagus and chop into 1-inch pieces.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and onion, stirring continuously until both are fragrant and lightly golden brown (about 2 - 3 minutes).
- Add the asparagus, parsley, black pepper and chili flakes (if using). Cook, stirring occasionally, for about 5 minutes until the asparagus is tender.
- In a large bowl, whisk together the eggs and pour the egg mixture over the vegetables in the skillet, stirring once or twice to ensure that they are evenly distributed.
- Cover the skillet and cook for about 10 minutes until the eggs are almost set.
- Place the skillet in the preheated oven and bake for another 8 - 10 minutes, until the frittata is fully set.
- Remove the skillet from the oven. Let it cool for 5 minutes before serving.
Recommended Sides
This frittata goes great with a side of roasted potatoes and steamed vegetables.
