Ingredients
- 4 medium potatoes
- 1 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- A pinch of red chilli powder
- 2 tablespoons ghee
- 1 cup fresh tomato puree
- 2 tablespoons cooking cream
- 2 tablespoons fresh coriander, finely chopped
Directions
- Preheat the oven to 400F.
- Wash the potatoes, wrap them in foil and bake for 35 minutes or until tender.
- Once cooked, peel the potatoes and cut into quarters.
- Heat up the ghee in a large pan, add the cumin and coriander powder and fry for few seconds.
- Add the tomato puree and cook for few minutes until it starts to thicken.
- Add the turmeric powder and red chilli powder and stir to combine.
- Add the cooked potatoes and stir gently so that they are evenly coated with the sauce.
- Simmer on low heat for 10-15 minutes.
- Finally, stir in the cream and coriander leaves, and cook for few minutes more.
- Serve piping hot and enjoy!
