Chickpea and Spinach Curry

Ingredients
- 1 can of chickpeas, drained and rinsed (400 g)
- 2 tablespoons of vegetable oil
- 1 onion, chopped (150 g)
- 1 teaspoon of cumin powder
- 1 teaspoon of mustard seeds
- 2 cloves of garlic, finely chopped (20 g)
- 1 red chilli, finely chopped (10 g)
- 2 teaspoons of garam masala
- 2 tablespoons of tomato paste
- 1/2 cup of water (120 ml)
- 2 cups of spinach leaves (200 g)
- 1 teaspoon of coriander powder
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of salt (optional)
Directions
- Heat the oil in a large saucepan over medium heat.
- Add the onion and sauté for about 5 minutes, or until softened.
- Add the cumin and mustard seeds, garlic, and chilli and cook for 1 minute.
- Add the garam masala, tomato paste, and water. Simmer for 5 minutes.
- Add the chickpeas and spinach and cook for 5 minutes.
- Add the coriander powder and turmeric and cook for another minute.
- Add the salt if desired and stir to combine.
