Ingredients
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 500g chicken thighs or drumsticks, skinned and jointed
- 2 240g cans tomato sauce
- 1 red bell pepper, finely chopped into 1cm cubes
- 1 onion, finely chopped
- 2 tsp dry oregano
- 2 tsp dry rosemary
- 1/4 cup fresh parsley, finely chopped
Directions
1) Heat the olive oil in a large deep frypan on medium-high heat. 2) Add the garlic and sauté for 1 minute until fragrant. 3) Add the chicken and cook, stirring often, for 4-5 minutes or until it starts to brown. 4) Add the tomato sauce, bell pepper, onion, oregano, and rosemary and reduce the heat to medium-low. 5) Simmer for 20-25 minutes or until the chicken is cooked through. 6) Stir in the parsley and cook for a further 5 minutes. 7) Remove from heat and serve hot.
