Ingredients
- 1 can of white beans (400g), drained and rinsed
- 1 carrot, peeled and diced
- 1 potato, peeled and diced
- 1/2 onion, diced
- 1/2 cup of frozen peas
- 2 cups of vegetable broth
- 1/2 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of black pepper
Directions
- In a large pot, heat a bit of vegetable broth over medium heat.
- Add the diced onion and cook until translucent, about 3 minutes.
- Add the diced carrot and potato, and cook for another 5 minutes.
- Pour in the rest of the vegetable broth and bring to a boil.
- Lower the heat and let it simmer for 15 minutes, until the vegetables are tender.
- Add the white beans, peas, paprika, garlic powder, thyme, and black pepper. Stir well.
- Let it simmer for another 5 minutes to allow the flavors to blend.
- Serve the Bohneneintopf warm and enjoy!
