Ingredients
- 200g of cooked beetroot, peeled
- A small red onion, finely chopped
- 2 tablespoons of olive oil
- 1 tablespoon of freshly squeezed lemon juice
- A small bunch of fresh parsley, finely chopped
- Optional if available: a tablespoon of chives, chopped
- Salt and pepper, to taste
Directions
- Start by peeling your beets. Slice them into thin slices and then cut into small cubes.
- In a bowl, combine the cubed beetroot with the finely chopped red onion and mix.
- In a separate bowl, mix together the olive oil, the lemon juice, the parsley and the optional chives.
- Pour the dressing over the beetroot and onion and mix until all the ingredients are fully combined.
- Add salt and pepper to taste.
- Joke for the little ones: Place the tartare into small dishes and pretend like it’s a snow castle and you’re a giant!
- Serve the Tartare de Betterave chilled, in small bowls or plates.
