Ingredients
- 15g Walnuts
- 240g Cooked Rice
- 150g Cooked Bacon Bits
- 85g Chopped Cucumber
- 85g Chopped Green Pepper
- 85 Chapotle Peppers in Adobo Sauce
- 120mL Light Sour Cream
- 120mL Light Mayonnaise
- 30 mL Juice of a Lime
- 85g Shredded Cheddar Cheese
Directions
- Begin by preheating your oven to 350°C.
- Put the walnuts in an oven-safe dish and bake for ~8 minutesor until lightly golden.
- While the walnuts are bakingcombine the cooked ricebacon bitscucumberand green pepper in a bowl and set aside.
- Remove the walnuts from the oven and let cool before chopping them up into small pieces. Joke: What did one nut say to the other nut? : “May the shells be with you!”
- NowNeaten the Choapotle peppers in Adobo sauce according to the package instructions.
- In a separate bowl combine the light sour creamlight mayonnaiseand the juice of a lime to make the dressing.
- Once you have mixed the dressingpour it in with the bowl with the cooked rice and vegetables and mix everything together.
- Finallyin the same bowl add in the walnutscheesyand neaten the Choapotle peppers. Gently stir the contents of the bowl until everything is evenly distributed. Joke: What did the Mexican tomato say to the other tomato? : “Let’s go to the beach and make guacamole!”
