This dish is so delicious, your toddler won’t realize it’s healthy! Serve it as part of your family’s meal to get them to eat their veggies.
Ingredients:
- 2 cups baby spinach (120g)washed and dried
- 1/2 cup feta cheese (60g)
- 1/4 cup diced red pepper (25g)
- 1/2 cup diced cucumber (50g)
- 2 tablespoons olive oil (30mL)
- 2 tablespoons raspberry or white balsamic vinegar (30mL)
Directions:
- In a large bowladd the baby spinach.
- Cube the feta cheese and carefully add it to the bowl.

- Dice the red pepper and cucumber. Add the diced vegetables to the bowl.

- Pour in the olive oil and balsamic vinegar and mix together.
