Kofta Curry

Ingredients
- 400g diced potatoes
- 1 large onion
- 2 cloves of garlic
- 2 tablespoons vegetable oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1/4 teaspoon turmeric
- 2 tablespoons tomato puree
- 2 tablespoons nut butter
- 1/2 teaspoon chilli powder
- 200ml coconut milk
- Salt and pepper to taste
- 4 tablespoons chopped fresh coriander leaves
Ingredients:
- 300g minced lamb
- 1 onion, finely chopped
- 1/2 teaspoon garam masala
- 1/2 teaspoon ground cumin
- 2 tablespoons fresh chopped coriander
- 2 tablespoons potato flour
- 2 tablespoons breadcrumbs
- 2 tablespoons vegetable oil
Directions
- Begin by preparing the kofta. Place the minced lamb in a bowl and season with the garam masala, ground cumin, chopped coriander and potato flour. Combine the ingredients until it forms a paste.
- Divide the mixture into small balls and roll each one in breadcrumbs.
- Heat the vegetable oil in a pan and fry the kofta until golden brown. Set aside.
- Peel and dice the potatoes and place them in a saucepan of boiling water. Cook for 10 minutes until tender then place aside and keep warm.
- In a separate saucepan, heat the vegetable oil and add the chopped onion and garlic. Cook for 5 minutes or until lightly browned.
- Add the ground coriander, ground cumin and garam masala and stir for 2 minutes.
- Add the tomato puree and nut butter and stir until combined.
- Gradually add the coconut milk and stir until it forms a thick sauce.
- Add the cooked potatoes and kofta to the sauce and simmer for 15 minutes or until the sauce has thickened.
- Finally add salt and pepper to taste and garnish with fresh coriander.
Recommended Sides
This Kofta Curry goes great with naan bread, basmati rice or a simple green salad.
