Ingredients
- 800g chicken tenderloin (chicken breast cut into strips)
- 120g plain flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 80ml whole milk
- 2 eggs
- 90g bread crumbs
- 90g panko
- Canola oil for frying
Directions

Preheat the oil in a large heavy-bottomed pot or deep-fryer over medium-high heat and set aside.

Cut the chicken into strips about 2-3cm thick and set aside.

In a bowl, mix together the plain flour, baking powder, garlic powder and smoked paprika.

Whisk together the whole milk and eggs in a separate bowl.

In a third bowl, mix together the bread crumbs and panko.

Take each strip of chicken and dip it first in the flour mixture, to coat it evenly.

Then dip the chicken in the milk and egg mixture, to coat it evenly.

Finally, dip the chicken in the bread crumbs and panko mixture to coat it evenly.

Once the chicken strips are all coated, place them in the preheated oil.

Fry the chicken strips for 3-4 minutes, until they’re golden and cooked through. (Tip: Place a lid over the pot while frying for extra heat)

Remove the chicken strips from the oil and place them on a paper towel-lined plate.
