Ingredients
- 200g plain flour
- 75g caster sugar
- 2 medium free-range eggs
- Zest of 2 lemons
- 2tsp baking powder
- 125g butter
- 50g ground almonds
Directions

Preheat oven to 170°C.

In a large bowl, combine flour, sugar, baking powder, and butter. Mash with a wooden spoon until the mixture resembles grainy, sandy crumbles.

Crack eggs into a small bowl and mix with a fork. Add to the flour mixture in the large bowl, then stir in the lemon zest and ground almonds.

Knead the dough for a few minutes until it is smooth and not sticky.

Split the dough into two equal portions, and roll each portion into a log about 4 cm thick. Place logs on a non-stick baking tray.

Bake in the pre-heated oven for 30-35 minutes, or until golden-brown.

Cut the logs into 1 cm thick biscotti strips. Lay the cut pieces on the baking tray and bake for a further 8-10 minutes.
