Ingredients
- 200g plain flour
- 75g caster sugar
- 2 medium free-range eggs
- Zest of 2 lemons
- 2tsp baking powder
- 125g butter
- 50g ground almonds

Preheat oven to 170°C.

In a large bowl, combine flour, sugar, baking powder, and butter. Mash with a wooden spoon until the mixture resembles grainy, sandy crumbles.

Crack eggs into a small bowl and mix with a fork. Add to the flour mixture in the large bowl, then stir in the lemon zest and ground almonds.
