Baba Ghanoush with Za'atar
This vegan and gluten-free baba ghanoush with za’atar is a great option to include in your toddler’s diet. Ingredients
- 2 eggplants, about 500g each
- 30ml of tahini
- 2 cloves of garlic
- Juice of 1/2 a lemon
- 2 tsp of za’atar
- A pinch of cumin
- A pinch of smoked paprika
- 2 tablespoons of olive oil
- Salt and pepper to taste
Directions

Preheat the oven to 200°C.

Cut the eggplants in half lengthwise and place them cut side down on the baking sheet. Bake for 25 minutes, until they are very soft when you press on them. When they are done, set them aside to cool.

Once the eggplants have cooled, scoop the flesh out and discard the skins.

In a food processor, add the eggplant flesh, tahini, garlic, lemon juice, za’atar, cumin, smoked paprika, and olive oil. Process until smooth.

Taste and adjust the seasoning with salt and pepper, if necessary.

Transfer the mixture to a bowl and serve with pita or crackers.
