Ingredients
- 0.5 kilogram pumpkin of your choice (e.g. butternut, hubbard, etc.), peeled, deseeded and cut into 2 centimeter cubes
- 4 cloves garlic, peeled and finely minced
- 2 medium onions, finely diced
- 20 milliliters extra virgin olive oil
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 1.5 liters vegetable or chicken stock
- Black pepper to taste
Directions

Preheat your oven to 175°C (or 350°F).

Line a roasting tray with parchment paper and spread out the pumpkin cubes, minced garlic and diced onions.

Drizzle over the olive oil and sprinkle over the ground nutmeg, cumin and coriander.

Roast in the oven for 30 minutes.

While the vegetables are roasting, heat the stock in a large saucepan until it begins to simmer.

Once the vegetables are cooked, add them to the stock and bring the soup back up to a simmer.

Simmer the soup for 10 minutes before blending it with a hand-held blender until it is smooth and creamy. If you don’t have a hand-held blender, you can always transfer the soup to a traditional blender.
Tip: If you’re making this soup with your children, make sure they stay away from the blender while it’s on! Safety first, folks!
