Ingredients

  • 1 tablespoon (15ml) extra-virgin olive oil
  • 1 red onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) tomato paste
  • 3 cups (710ml) vegetable broth
  • 1 can (540ml) cannellini beans, drained and rinsed
  • 2 bay leaves
  • Pinch of red pepper flakes
  • 2 sprigs fresh thyme
  • 4 cups (940ml) kale, stemmed and chopped

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the red onion, carrots, celery, and garlic and cook until the vegetables are tender, about 5 minutes.

  2. Add the tomato paste and stir to incorporate. Cook for another 1-2 minutes.

  3. Add the vegetable broth, cannellini beans, bay leaves, red pepper flakes, and thyme. Bring to a boil, then reduce heat to a simmer and cook for 15-20 minutes.

  4. Add the kale and continue to simmer for an additional 10 minutes.

  5. Remove the bay leaves and thyme sprigs, then season to taste with salt and pepper.
