Ingredients
- 2 medium zucchinis (450g) diced
- 2 cups cooked quinoa (400g)
- 1 cup ground flaxseeds (100g)
- 2 tablespoons olive oil (25ml)
- 6 cloves garlic, minced
- 1 teaspoon ground cumin (3g)
- 1 teaspoon paprika (3g)
- 1 teaspoon turmeric (3g)
- ¼ cup fresh parsley, chopped (….remember this one is easily choke-able so cut finely!) (20g)
- ¼ cup fresh mint, chopped (20g)
Directions

Preheat oven to 180°C (350°F).

Start by dicing the zucchinis. (Kids love this part!)

In a medium mixing bowl, combine the quinoa and ground flaxseeds.

In a separate bowl, mix together the olive oil, garlic, cumin, paprika and turmeric.

Pour the oil mixture into the quinoa mixture and stir to combine.

Gently stir in the fresh parsley and mint.

Next, add the diced zucchinis and mix the ingredients together.

Grease a baking dish with a little extra oil and transfer the kibbeh mixture into it.

Bake for 25 minutes, until lightly golden and crispy.
