White Pizza

Ingredients
- 2 cups all-purpose flour
- 2 tsp. active dry yeast

2/3 cup warm water
- 2 cloves garlic (minced)
- 2 cups shredded mozzarella cheese
- 1 tsp. freshly ground pepper
- 1 cup ricotta cheese
- 2 cups baby spinach
- 2 Tbsp. freshly grated Parmesan cheese
Directions
- In a large bowlcombine the flour and yeast. (Joke: What did the bread say after it was kneaded? “WowI’m feeling so exercised!)
- Slowly pour in the water and 2 tablespoons of the olive oil while stirring the mixture.
- Once the mixture is evenly combinedknead the dough for about 10 minutes on a lightly floured surface until it is smooth and elastic.
- Place the dough back in the bowlcover it with a clean kitchen towel and let it rise for about 15 minutes.
- Preheat the oven to 350°F.
- Flatten the dough onto two lightly oiled baking sheets. (Joke: How does a pizza introduce himself? HiI’m Dough!)
- Brush the remaining olive oil on top of the doughfollowed by the garlic and shredded cheese.
- Wait until the cheese has melted and dot the top with ricotta cheese.
- Add the spinach and freshly ground pepperand sprinkle the Parmesan cheese on top.
- Bake in the preheated oven until the cheese has melted and the crust is goldenabout 15 minutes.
