Ingredients

  • 8 sheets of fresh round rice paper
  • 150 g shredded or julienned carrot
  • 1/2 large cucumber, julienned
  • 4-6 (depending on the size) leaves of lettuce
  • 100 g cooked chicken meat, shredded
  • 20 g fresh mint leaves
  • 20 g fresh coriander
  • 2 tablespoons hoisin sauce
  • 2 tablespoons fish sauce

Directions

  1. Begin by preparing all of the ingredients by washing the vegetables and herbs thoroughly and cutting them into different shapes and sizes. Julienne the carrots, cucumber, lettuce, and shred the cooked chicken meat.
  2. Place the rice paper sheets into a large bowl or dish of hot water and let it soak for about one minute until it becomes pliable.
  3. Carefully take the sheet out onto a cutting board or another flat surface and layer it with the shredded carrots, cucumber, lettuce, cooked chicken, mint and coriander leaves.
  4. Next, carefully fold the side of the paper closest to you over and roll it up away from you.
  5. To hold it in place, dip your finger into a mixture of hoisin and fish sauce and lightly brush it along the edge of the spring roll.
  6. Once all of the spring rolls are rolled, heat a large skillet with a small amount of vegetable oil over medium heat.
  7. Once the pan is hot, add the spring rolls and cook for 2-3 minutes or until the exterior is slightly crispy and golden.
  8. Enjoy your Vietnamese Spring Rolls with a refreshing side of peanut sauce.
