Ingredients

  • 400 grams of raw beets
  • 2 tablespoons of olive oil
  • 1 garlic clove
  • 2 tablespoons of fresh herbs (such as thyme, oregano, parsley, or chives)
  • Salt and pepper (optional)
  • Lemon juice (optional)

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Peel and wash the beets.
  3. Cut the beets into cubes and place them in a baking dish.
  4. Add the olive oil, garlic, herbs, and a pinch of salt and pepper. Mix everything together. Make sure the cubes are well coated with the olive oil.
  5. Bake the cubes for 25-30 minutes. Keep an eye on them so they don’t burn.
  6. When the beets are soft and slightly golden in color, remove them from the oven.
  7. Roughly mash the beets with a fork and add a squeeze of lemon juice (optional).
  8. Serve warm in small dishes or verrines.
