What you need

  • 2 white or whole wheat tortillas
  • ½ of a red bell pepper (diced in 1 inch cubes)
  • ½ of a green bell pepper (diced in 1 inch cubes)
  • ½ of a small red onion (diced in 1 inch cubes)
  • ½ cup cooked black beans
  • ½ cup cooked corn
  • 2 tablespoons olive oil
  • ¼ teaspoon minced garlic
  • ¼ teaspoon cumin
  • 2 tablespoons fresh chopped cilantro
  • 2 tablespoons lime juice

Instructions

  1. Preheat oven to 350°F (177°C).

  2. Spread the bell peppersred onionblack beans and corn on a baking sheet. Drizzle with olive oil and sprinkle with minced garlic and cumin.

  3. Bake for 15 minutesstirring halfway through.

  4. Place 1 tortilla on a plate. Add a quarter of the roasted vegetables. Top with cilantrolime juice and more cuminif desired.

  5. Roll up the tortilla and repeat with the remaining tortillas and vegetables.

  6. Serve!
