What you need
- 2 white or whole wheat tortillas
- ½ of a red bell pepper (diced in 1 inch cubes)
- ½ of a green bell pepper (diced in 1 inch cubes)
- ½ of a small red onion (diced in 1 inch cubes)
- ½ cup cooked black beans
- ½ cup cooked corn
- 2 tablespoons olive oil
- ¼ teaspoon minced garlic
- ¼ teaspoon cumin
- 2 tablespoons fresh chopped cilantro
- 2 tablespoons lime juice

Preheat oven to 350°F (177°C).
