Ingredients

  • 1 onion diced
  • 1 red bell pepper diced
  • 420g canned black beansdrained
  • 420g canned red kidney beansdrained
  • 1 tablespoon of mild chili powder
  • 2 cloves garlicminced
  • 2-3 tablespoons of tomato paste
  • 300g canned chopped tomatoes
  • A pinch of cayenne pepper
  • 1 teaspoon of ground cumin
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of black pepper

Instructions

  1. Preheat the oven to 180°C and pre-heat a large pot over medium-high heat. Add the olive oil and diced onion and bell pepper to the pot. Saute for 5-7 minutes or until the vegetables are tender and lightly browned. Joke alert: Q: What did the hungry onion say? A: I’m so a-dice-d!
