Ingredients

  • 140 g all-purpose flour
  • 1 teaspoon baking powder
  • 110g vegan margarine
  • 140ml almond milk
  • 150ml pure maple syrup
  • A few drops of vanilla extract

Steps

  1. Preheat the oven to 200C (392F) and line a 12-hole muffin tin with cupcake liners.

  2. In a medium bowl, whisk together the flour and baking powder.

  3. In a separate bowl, melt the vegan margarine in your microwave for 30 seconds.

  4. Add the almond milk, maple syrupand vanilla extract to the melted margarine and whisk until well combined.

  5. Pour the wet ingredients into the bowl with the flour and baking powder.

  6. Gently whisk together the ingredients until just combined. Be careful not to over mix!

  7. Add the cupcake batter to the lined muffin tin, making sure to fill each hole no more than 3/4 full. (Joke: Nobody likes a cupcake that’s overflowing!)

  8. Bake for 15-18 minutes, or until a toothpick inserted into the centre of a cupcake comes out clean.

  9. Let the cupcakes cool completely before serving.
