Ingredients

  • 2 chapati (an Indian-style flatbread)
  • 2 tablespoons of plain yogurt
  • 2 tablespoons of vegetable oil
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 2 cloves of garlic, minced
  • 2 green chillies, finely chopped
  • 1 red bell pepper, chopped
  • 1 grated carrot
  • 2 tablespoons of chopped fresh coriander leaves
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of garam masala
  • 2 tablespoons of chopped fresh mint leaves

Directions

  1. Start by heating a large skillet or pan over a medium heat with 1 tablespoon of vegetable oil.
  2. Once the oil is hot, add the onion, garlic and chillies and cook for 1-2 minutes until softened.
  3. Add the chopped tomatoes and cook for 2-3 minutes.
  4. Then add the red bell pepper, grated carrot, cumin powder and garam masala and cook for 3-4 minutes.
  5. Fold the chopped coriander leaves and mint leaves in, and cook for a further minute before taking off the heat and setting aside.
  6. Now, it’s time to put the kathi rolls together. Spread 1 tablespoon of yogurt and 1 tablespoon of vegetable oil onto each chapati. Don’t worry if it’s not perfectly smooth - it’s supposed to be a bit coarse - it adds to the texture!
  7. Sprinkle the veggie mixture in the center of each chapati and roll tightly.
  8. Heat the same skillet over a low-medium heat and add each kathi roll. Cook for 4-5 minutes on each side. And… that’s it!

Recommended Sides

For a complete meal, you could serve each roll with a simple cucumber and red onion raita (an Indian-style yogurt sauce). Or just eat with a bowl of your favourite vegetables. Enjoy!
