Ingredients

  • 2 cucumbers, washed and sliced into 1 cm by 1 cm pieces
  • 1 teaspoon of sea salt
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sugar
  • 2 tablespoons of dashi
  • 2 tablespoons of soy sauce

Directions

  1. Begin by washing the cucumbers and slicing them into 1 cm by 1 cm pieces.
  2. Place the cucumbers in a bowl and add the sea salt. Mix together, and let sit for 10 minutes.
  3. In a small pot, combine the rice vinegar, sugar, dashi, and soy sauce.
  4. Heat on low heat until the sugar is dissolved.
  5. Remove from heat and let cool for a few minutes.
  6. Place the cucumbers in a jar, then pour the mixture over the top.
  7. Make sure that the cucumbers are completely covered.
  8. Place a lid on the jar and let sit in the refrigerator for at least 4 hours, or overnight for best results.
  9. When ready to serve, drain any excess liquid, and enjoy!
