Ingredients
- 200g dry ring shaped tortellini
- 1 tablespoon extra-vm olive oil
- 1x small white onion, minced
- 2x cloves of garlic, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- Salt and pepper
- 500g ground beef
- 400g canned chopped tomatoes
- 80ml beef broth
- 1x small carrot, grated
- 1x tablespoon tomato paste
- 180ml heavy cream
- 2x tablespoon chopped fresh parsley

Start by boiling the tortellini following the instructions on the package. Keep for 15 minutes. Strain and set aside.

In a large sauté pan, heat the oil over medium heat and add the onion, garlic, oregano, thyme, salt and pepper to taste. Sauté until the onion and garlic are softened, about 3 minutes.

Add the ground beef and cook until it is nicely browned, about 12 minutes.

Add the canned tomatoes, beef broth, carrot, and tomato paste. Turn the heat down to low and simmer for 10-15 minutes, stirring occasionally.

Add the heavy cream and cook for an additional 5 minutes.

Add half of the cooked tortellini to the Bolognese sauce and stir gently to combine.

Serve the tortellini alla Bolognese with a sprinkle of freshly chopped parsley and the remaining cooked tortellini on the side… Enjoy!
