Ingredients

  • 300g firm tofu, drained and pressed
  • 1 small carrot, grated
  • 1/2 small zucchini, grated
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • Cooking oil for frying

Directions

  1. In a large mixing bowl, crumble the tofu with your hands until it resembles a chunky paste. This is a fun job for the little ones to help with!
  2. Add in the grated carrot, zucchini, breadcrumbs, egg, garlic powder, onion powder, and paprika. Mix everything together until well combined. The mixture should be thick enough to form into patties.
  3. Using your hands, shape the mixture into small patties, about the size of a golf ball. Flatten them slightly with your palm to form croquettes.
  4. Heat some cooking oil in a non-stick skillet over medium heat. Carefully place the tofu croquettes into the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Once cooked, remove the tofu croquettes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  6. Serve the tofu croquettes warm and enjoy!
  • Steamed broccoli
  • Sliced cucumbers
  • Cherry tomatoes
