Ingredients
- 2 medium sized potatoes
- 2 tablespoons unsalted butter (substitute another non-dairy butter to make this recipe dairy-free)
- 2 tablespoons finely diced onion
- 2 tablespoons all purpose flour
- 1 teaspoon freshly grated nutmeg
- 2 eggs, lightly beaten
- 2 tablespoons finely chopped parsley
- Salt and pepper to taste
- 2 tablespoons vegetable oil (for frying)

Start off by prepping your potatoes. Peel and wash them, then cut them into small cubes, about the size of your thumb. Place the cubes in a pot with enough water to cover them. Bring to a boil, then reduce to a gentle simmer and cook for 15 minutes, until the potatoes are just softened. Drain the potatoes and mash them with a potato masher or a fork until mostly smooth.

While the potatoes are cooking, in a small pan heat the butter over low heat until melted. Add in the onions and cook until softened, about 5 minutes.

Now it’s time to get your Knödels ready! In a medium bowl, combine the mashed potatoes, onion-butter mixture, flour, nutmeg, eggs, parsley, and salt and pepper. Blend together well with a wooden spoon.

Once the dough is blended, time to start shaping! Using clean hands, form the dough into 12 small balls, about 1 inch in diameter.

Heat the vegetable oil in a non-stick skillet over medium-high heat until shimmering. Carefully place the Knödels into the hot oil and fry until golden brown on one side, about 2 minutes. Flip and continue to fry for 1-2 minutes more, until the Knödels are golden brown on both sides.

Once cooked, carefully remove the Knödels from the oil and place on a paper towel lined plate to absorb the excess oil. Serve immediately.
