Ingredients

  • 24 chicken wings, fully thawed
  • 2 cups soy sauce, reduced-sodium
  • 2 cups mirin, a sweet sake-like cooking wine
  • 1 cup sake, an alcoholic beverage from Japan, or dry white wine

Directions

  1. Preheat oven to 375°F (190°C).

  2. Place chicken wings in a single layer on a baking sheet lined with parchment paper.

  4. Bring the mixture to a simmer and cook until the sauce has reduced by half and is slightly thickened. This should take about 10 minutes.

  6. Bake for 40 minutes, or until the sauce is caramelized and the chicken is cooked through.
